The Specialization programme Culinary Arts is based on a sound technical training, wich aims to train specialized Culinary Arts Technicians for:

  • preparing, cooking and plating food in a top quality service by applying new methods of food production;
  • planning, directing and coordinating Kitchens; and
  • collaborating with the Food & Beverage Department in the structuring of menus and in the process of cost management.

This vocational education programme thus aims to offer qualified technical professional chefs to the tourism sector, for the exercise of managerial and technical positions in the kitchen, capable of reaching high levels of quality, accountability and rigor in execution.

Note: in 2011/2012 this offer will only be available in Lisbon and Estoril.
