With its origins in Portugal dating back to a time long before the very foundation of the country, wine is deeply rooted in our culture. The climate, tradition, and passion kept wine production alive over time and, gradually, wine became one of the great flagships of our gastronomy, making Portugal a country of great wine lovers.
In partnership with the Portuguese Sommeliers Association, a member of the Association de la Sommellerie Internationale, this course aims to qualify professionals in the art of good service.
Objectives
- Have knowledge of the main wines originating in Portugal and other reference world producer countries/regions;
- Identify the main gastronomic recipes of the country/region and their relationship with the historical heritage;
- Taste the various types of wine, guaranteeing quality service;
- Organise the service of wines and other beverages;
- Know all the processes for transforming grapes and wine;
- Organise and manage the wine cellar;
- Identify the structure of stock management, quality management and control;
- Make inventories, ascertain consumption and calculate costs and ratios;
- Know, advise, make and serve the different types of simple or complex beverages;
- Know and apply principles of the enogastronomic relationship.
